I enjoyed discovering your blog through Freshly Pressed. Like you, I enrolled in culinary school as a “mature” student, and am enjoying it (although I prefer the “lab” classes in the kitchen to the classroom ones about budgeting and personnel … maybe that is why so many restaurants fail, the chef would rather be in the kitchen than the office!)

Best of luck to you, I’ve enjoyed all the photos of the things you’ve been making.

Thanks for reading. The program is great and the last time I was in college was in the late 70’s. I’m kinda amazed as to the lack of interest in most of the teen, early 20’s students. Did you find that as well?

  3. The Restaurant industry is a tough biz to be in. I hope people know that before they own/manage one or cook. Be sure you Love this and it’s the #1 thing you do best. Best of luck!

As for me – I’ll remain in the dining room. As an eater.

I’ve worked in the front of the house for many years and I know how tough it is. I’m not certain where this journey will take me…if anywhere. Private chef perhaps?
